Vouette & Sorbée is one of the top-rated Maisons in the Côte des Bar, the southernmost area of the Champagne region. The Domaine is located near Buxières-sur-Arce, in a beautiful area of rolling hills. The Côte des Bar has a milder climate than the Montagne de Reims, the Côte des Blancs and the Vallée de la Marne, but above all it has a particular soil composition. The soils are of the kimméridgien type, similar to those of Chablis, and are predominantly composed of limestone, calcareous marls or calcareous clay marls. It is precisely these pedoclimatic differences that contribute to the uniqueness of this territory and its specificity.
The most widely cultivated grape variety is Pinot Noir but there is no shortage of Chardonnay vines, which yield excellent grapes due to the similarity of the soils to those in the Chablis area. The entire estate is certified organic and biodynamic and is managed using only sulfur, copper, and natural preparations, such as cornoletam, cornosilica, herbal teas and extracts of herbs or essential oils. Harvesting is done manually, is done by individual parcel when the grapes are fully ripe, and takes about three weeks in total. The same care and attention given to the vineyard is found in the winery, where the best bunches are pressed using a classic Coquard vertical press. The must is then transferred by gravity into 400-liter French oak barrels, barriques or terracotta containers.
Fermentations take place spontaneously, using only indigenous yeasts. All the base wines used to elaborate the Vouette & Sorbée cuvées mature in wood. After the long period of aging on the lees, dégorgement à la volée and final corking take place without adding any sugar dosage, so as to maintain the expressive purity of the wine. The labels authentically represent the terroir and convey the energy of vibrant, intense, taut and elegant Champagnes that deliver a deep and complex taste experience.
