The Vin Santo del Chianti Classico Castello di Meleto is a sweet Tuscan wine made from Sangiovese, Malvasia Nera and Trebbiano Toscano, which ferments in acacia and cherry wood barrels, where it remains to age for 4-5 years. The palate is sweet, rich, enveloping and velvety, while the nose expresses intense notes of dried fruit, honey, apricot and hints of vanilla and spices. Perfect to accompany classic Tuscan cantucci at the end of a meal, or to pair with a board of aged and blue cheeses
The Vin Santo of Chianti Classico from Castello di Meleto is a sweet Tuscan wine with an ancient tradition, produced with Trebbiano, Sangiovese, and Malvasia grapes from the vineyards of Meleto and S. Piero, located at an altitude of 400 meters above sea level. The vineyards, planted between 1972 and 1974, are cultivated with a density of 3,500 vines per hectare following the Guyot training system, ultimately creating a product capable of providing unique emotions with each tasting.
The grapes destined for the Vin Santo of Chianti Classico from Castello di Meleto are manually harvested, with careful selection of the grapes directly on the vine. Subsequently, the grape clusters are left to naturally wither in well-ventilated rooms, preserving the organoleptic characteristics of the grapes. Vinification takes place in acacia and cherry wood barrels, sealed and stored in environments characterized by a marked seasonal temperature variation. Here, the wine ferments and matures for a period of 4-5 years, with the barrels filled only to 70%. This lengthy aging process gives this Vin Santo its peculiar taste and aromatic notes.
Upon tasting, the Vin Santo of Chianti Classico from Castello di Meleto presents itself with an amber yellow color and releases intense aromas of dried fruit, honeyed notes, hints of apricot and vanilla, and spicy undertones. On the palate, it stands out for its fullness, velvety texture, and great structure, with a persistent finish and well-balanced acidity. It is an ideal sweet wine to accompany traditional Tuscan desserts such as cantucci, thanks to its enveloping sweetness and aromatic complexity. But not only that, it also pairs well with a platter of aged and blue cheeses, where its roundness and structure can skillfully balance the intense flavors of the cheeses.
