Valpolicella Classico Santa Sofia is a vibrant and balanced wine made from Corvina, Corvinone and Rondinella grapes from vineyards with calcareous soils. With a brilliant ruby colour and an intense bouquet of red fruit and spices, this red wine is drinkable and pleasantly supported by fine, delicate tannins, perfect with meat dishes
Among the rolling hills of the Classic Valpolicella, caressed by the fresh breeze from Lake Garda, stands the Santa Sofia winery. Here, amidst sun-kissed vineyards and the majestic backdrop of Andrea Palladio's Villa Sarego, the Valpolicella Classico Santa Sofia comes to life. The Corvina, Corvinone, and Rondinella grapes, cultivated with love and respect for the land, impart a unique soul to this wine, while the label bears the seal of a history spanning over two centuries of excellence.
Immersed in the heart of Valpolicella, Santa Sofia's vineyards stretch across mineral-rich soils, endowing the grapes with an unmistakable character. Here, the vine's cycle follows the rhythm of the seasons, while the winery becomes the temple of winemaking art. After meticulous harvesting, the grapes are carefully transported to the ancient cellars of Villa Sarego, where the magical transformation process begins. Gentle pressing and destemming mark the beginning of the process, followed by a 7-8 day maceration in stainless steel tanks capturing the intensity and harmony of the terroir. Aging then takes place, always in stainless steel, for 3-6 months, and finally, the last step is bottle maturation, for at least three months.
At the first sip, the Valpolicella Classico Santa Sofia reveals its vibrant and enveloping spirit, with a brilliant ruby color. The intense aroma of red fruit and spices invites the senses on a journey through the pathways of Valpolicella. On the palate, its balanced and drinkable personality captivates with fine tannins and lively freshness. This wine, when young, pairs well with the lightness of Venetian cold cuts and the creaminess of a liver risotto, while with time, it transforms into an ideal companion for the pleasures of meat and rustic dishes. And if you dare, try pairing it with stewed cod, and be amazed by the harmony of flavors and aromas created.
