The Savagnin by Domaine de Sainte Marie is a white wine that stands out for its oxidative style typically associated with the variety and winemaking tradition of the Jura region. Indeed, the Savagnin grape, native to the sub-alpine Jura region, lends itself exceptionally well to the sous voile vinification, literally "under the veil," a process that involves long aging under the veil formed by flor yeast. These yeasts, also responsible for the production of sherry in Spain, on one hand protect the wine from uncontrolled oxidation, while on the other hand develop characteristic aromas associated with the style of these wines.

The Domaine de Sainte Marie Savagnin Côtes du Jura is made from pure Savagnin grapes cultivated using eco-sustainable practices. Once harvested, the grapes are transferred to the winery and undergo spontaneous alcoholic fermentation conducted by indigenous yeasts. Aging, which takes place in wooden barrels, lasts for about 4 years, during which the veil of flor yeast protects the wine and adds greater aromatic complexity. After this period, the wine is finally bottled and, after an appropriate period of rest, released onto the market.

The Côtes du Jura Savagnin by Domaine de Sainte Marie has a shiny golden yellow color. The aromatic profile is deep and original, with fruity aromas of candied citrus meeting peculiar spicy notes of curry and hints of toasted nuts. The taste progression is dry, dynamic, and moderately structured, defined by pronounced freshness and an incisive sapid-mineral character. The finish shows an excellent taste-olfactory correspondence with its lingering sensations of dried fruit, citrus, and oriental spices on the palate.
