Sauvignon from the Elena Walch winery is a fresh and elegant white wine produced, in Alto Adige in the area surrounding Lake Caldaro, by one of those wineries that has contributed most significantly to the region's quality revolution. This label is made from pure Sauvignon grapes from vineyards located at altitudes as high as 600 meters, with southeast and southwest exposure. The vineyards are true quartz porphyry terraces, trained by spurred cordon on soils characterized by limestone and dolomitic rocks mixed with sand. The winery, carried on by Elena Walch and her husband, together with their two daughters Julia and Karoline, pursues through the practice of green manure and the use of organic substances in the vineyard an idea of sustainable viticulture that limits treatments to a minimum with the goal of obtaining healthy, high-quality grapes.
Elena Walch's Sauvignon is made from grapes that are hand-picked and carefully selected during the September harvest. These are then brought to the winery very quickly to keep the aromatic properties of the variety intact. The clusters are softly pressed to release the flower must, which is then subjected to static clarification. Alcoholic fermentation takes place in stainless steel containers at a controlled temperature of about 19 °C. The wine is then racked off and aged for several months, on its own yeasts, in stainless steel containers.
This Sauvignon shows a bright straw yellow color with light greenish highlights. Aromas of crisp fruit, including green apple, citrus and gooseberry, floral notes of elderflower, intense vegetal and herbal hints, including sage, appear on the nose. In the mouth, it is clean, elegant and well-balanced, with a freshness and savoriness that meld into a lingering finish.
