Attems' Sauvignon is a fresh, fragrant, and intensely aromatic white wine that effectively showcases the typical characteristics of this important French grape variety, primarily cultivated in the Loire Valley. It is the result of the work of a historic Friulian estate, present in the territory since the 12th century and still a solid reference point for enthusiasts. The grape variety has adapted very well to the local pedoclimatic conditions, to the extent of becoming one of the oenological symbols of Friuli. The choice of a vinification process carried out exclusively in steel, and a very straightforward manner immediately and faithfully conveys the rich aromatic palette of Sauvignon Blanc.
Attems' Sauvignon wine is the product of a significant estate that manages 44 hectares of vineyards in a particularly suited area. The Collio Goriziano area is protected to the north by the foothills of the Prealps and open to the mild influence of the gentle breezes that come up from the Adriatic Sea. Under these conditions, the vines flourish and yield mature and rich grapes. The Sauvignon Blanc vineyards are located in the area that rises from the Friulian plain towards the first hills surrounding the city of Gorizia at an altitude of about 60 meters above sea level. In the flatter part, the soils are of alluvial origin, composed of gravel and pebbles, while going up towards the hills, the soils are characterized by the presence of Eocene flysch, with sedimentations of calcareous marls and ancient marine sandstones. The harvest takes place manually between late August and early September. The bunches are gently pressed, and after a static decantation of 24-48 hours, the must is sent for fermentation in steel tanks at a temperature of 18-20°C. The wine matures for 4 months on fine lees in stainless steel tanks.
The Sauvignon offered by the Attems winery is a wine that transparently expresses the grape variety's character in these lands. The choice of a processing method that is very respectful of the raw material allows for the appreciation of the primary aromas of this fascinating semi-aromatic variety. In the glass, it has a clear straw-yellow colour with greenish reflections. The olfactory profile is rich and intense, with vegetal notes of boxwood, tomato leaf, sage, nettle, floral hints, citrus aromas, grapefruit, lime zest, and white-fleshed fruit. The entry on the palate is fragrant and satisfying, with good richness and aromatic persistence, leading to a fresh and sapid finish.
