This decision stems from the fact that Dolcetto has often been considered a secondary grape, partly because it shares its production area with the more renowned Nebbiolo. However, it is a variety with a strong character and great qualitative potential, which Alessandro aims to fully enhance.
Drink Wines Not Labels Langhe Rosso is produced with only Dolcetto grapes grown in the Langhe area without the use of herbicides. The harvest is done by hand, while the cellar processing follows a low-intervention approach inspired by Burgundy. In this context, the grapes are vinified 100% whole cluster, with alcoholic fermentation taking place in stainless steel tanks thanks to the intervention of indigenous yeasts, accompanied by 8 days of maceration on the skins. Complete malolactic fermentation is carried out in stainless steel, and the wine is left to mature for several months until bottling, which is done without prior clarification or filtration.
The Langhe Rosso Dolcetto from Drink Wines Not Labels has a bright ruby red color with purplish reflections. The nose perceives hints of red fruits such as cherry, accompanied by light vegetal notes and floral hints, as well as traces of bitter almond. The taste is rich, drinkable, and juicy, characterized by light tannins and a balanced finish in which a slight salinity and again fruity and almond notes emerge.
