The Pinot Grigio from the Friulian winery Dario Coos is a white wine appreciated for its fragrant floral aromas, an interpretation of one of the international grape varieties that has adapted well to the territory of the Colli Orientali del Friuli. This variety, classified as a gray grape berry, originated in Burgundy in ancient times from a bud mutation of Pinot Noir. During the second half of the 20th century, Pinot Grigio was one of the trendiest grape varieties in northeastern Italy, but unfortunately too often cultivated and vinified to produce easy-drinking wines of poor quality. However, in more recent times, more and more wineries have decided to focus on this grape variety, seeking quality and restoring glory to this noble international variety.
Dario Coos Pinot Grigio is a 100% Pinot Grigio from vines grown in a natural amphitheater composed of steep terraced hills. The vines, cultivated without the use of desiccants and chemical herbicides, rest on the characteristic "ponca," a type of soil typical of the Colli Orientali del Friuli consisting of alternating marls and sandstones of Eocene origin. After manual harvesting, the grapes undergo a rapid and delicate soft pressing, so as not to extract the reddish color contained in the skins, with the resulting must being conveyed into stainless steel tanks for alcoholic fermentation at controlled temperature. This is followed by a refinement of at least 4 months always in steel on the fine lees.
Dario Coos Pinot Grigio has a pale straw yellow color with bright reflections. Aromas of Golden Delicious apple, pear, linden flowers, mandarin, and freshly cut grass describe the olfactory range, accompanied by sweet hints of vanilla. On the palate, it is balanced and of appreciable complexity, graceful in progression but not lacking in solid structure and good persistence.
