Donato Giangirolami's Malvasia Puntinata "Cardito" is a beautiful interpretation of one of the historic wines of our tradition. It originates in the Castelli Romani area, which since the times of Ancient Rome was famous for the quality of its wines, children of particularly suitable lands and a mild climate. Malvasia Puntinata is one of the wide varieties of this ancient Greek grape variety widespread throughout the Mediterranean area, which expresses a harmonious, soft and fruity wine. Vinification only in stainless steel preserves the grape's delicate profile, with floral aromas, fresh citrus notes and rich, fragrant white-fleshed fruit flavours.
"Cardito" is a pure Malvasia Puntinata produced by one of the leading wineries in the Castelli Romani area. Donato Giangirolami manages an estate of about forty hectares, with many parcels in the classic Castelli area. The vines are cultivated according to organic farming principles on soils of clay matrix with the presence of pozzolan and tuffs of ancient volcanic origin, particularly suited for white grapes. Great care in the vineyard is followed by very careful vinification, in total protection from oxygen, so that the wines can preserve the perfect fragrance and intensity of the scents and varietal aromas of the grapes. This is particularly important in the case of an aromatic grape variety such as Malvasia, which is thus able to express all its persuasive richness and gustatory finesse.
Malvasia Puntinata "Cardito" from the Castelli Romani winery Donato Giangirolami comes from a manual harvest followed by the process of cryomaceration of the grapes for a few hours. Soft pressing takes place under a vacuum so as to avoid oxidation of the must, which is then fermented in stainless steel tanks. Before bottling, the wine matures for some months on the lees in steel tanks with a periodic bâtonnage process. In the glass, it has a straw-yellow hue with luminous golden reflections. The bouquet expresses aromas of orange blossom, white flowers, aromatic herbs, hints of citrus, and fragrant aromas of peach and white fruit. The sip is harmonious, with a palate entry of soft and rich fruit, well-supported by a savoury streak and a refreshing finish. A bottle to discover the excellence of an ancient wine of our tradition.
