The Lambrusco di Sorbara "Rimosso" by Cantina della Volta is a Lambrusco naturally refermented in the bottle that comes from the sun Sorbara grapes grown in vineyards located next to the alluvial river Secchia. It was born in the winery of Christian Bellei and is the basis of a shared project with his friends to continue producing wine "in its own way"; a wine made by the traditional method of bottle fermentation that comes to life with passion and abnegation Christian who likes to call the wine as "the result of careful research and unrestrained passion". The Lambrusco di Sorbara "Rimosso" by Cantina della Volta is obtained by selection of the best grapes of Sorbara, harvested by hand and fermented in stainless steel tanks. After aging for 6 months in steel, the "Rimosso" by Cantina della Volta is bottled here and continues its evolution with a second fermentation that takes place in the bottle, with its lees. The result is a great Lambrusco di Sorbara that is offered in all its brilliance and in all its generous foam; a nice Lambrusco persistence that intrigues with its notes of wild strawberry, black currant and leaves on his final tones of almond and roasted peanuts.
