The red Chianti Classico Riserva Castellare di Castellina comes from Paolo Panerai's Tuscan Chianti estate, which has always been run with the intention of producing great terroir wines. The Sangiovese and Canaiolo vines are cultivated within the Castellina in Chianti estate, at an altitude of about 400 meters above sea level, on soils of predominantly limestone matrix, very suitable for red grapes. Harvesting takes place in early October, and the best grapes are sent for fermentation in temperature-controlled steel tanks. The wine rests for 15 months in French oak barriques and tonneaux and completes the long ageing process with 15 months in the bottle before release for sale.
