The Cuvée Prestige is the flagship of the small maison of Christiane Guillaumée, a winemaker from the Cote des Bars, on the southern border of Champagne. Her production is characterized by an original and impeccable style based on freshness and vitality. In this case, the style of the maison is embellished by a taste-olfactory richness of great value, which does not undermine the energy and verticality typical of the appellation, but supports and prolongs them.
Guillaumée's Champagne Prestige Brut is made mostly from Chardonnay grapes, with 30% of Pinot Noir added to it. The vines are rooted on clay and limestone soil in the Aube region, and the harvest is conducted strictly by hand. In the cellar, alcoholic and malolactic fermentations are carried out entirely in steel, with 25% reserve wine added to prepare the cuvée. After refermentation in the bottle, according to the Champenoise Method, aging on the lees is longer than for the house's other labels, reaching about 30 months. The stay on the lees is responsible for the enthralling fragrances of pastry, butter and bread crust.
