Maturano del Frusinate 'Arcaro' from the DS Bio winery is a fresh and savoury white wine perfect for accompanying fish dishes with excellent value for money. 'Arcaro' from the DS Bio winery is the liveliest and most immediate expression of the local indigenous Maturano variety, a white berry that grows within an unspoilt territory on the Latium slopes of the mountains leading into the Abruzzo National Park. The vines are surrounded by a varied environment, consisting of typical arboreal crops such as olive trees and the grazing of Esperia ponies, an endangered breed kept alive by the passion of winemaker Danilo Scenna, founder of the estate.
DS Bio makes its 'Arcaro' from the white Maturano berries that bear fruit on the estate's young vines, planted between 2013 and 2014 and trained biodynamically using the classic espalier system: a fine comparison with the other white wine label, made from the centuries-old vines of the same variety, trained as trees, and which give life to Matre. The soil is characterised by the strong presence of skeleton, which performs an excellent draining action, and by the important limestone sediments, typical contributors of minerality. At an altitude of approximately 630 metres above sea level, the excellent exposure allows for the necessary sunshine to guarantee the perfect ripening of the grapes, which are harvested by hand. Fermentation is spontaneous, initiated and conducted solely by indigenous yeasts and takes place in cement vats without maceration on the skins. Gravity racking into new cement vats allows the wine to mature for a few months on its fine lees. There are no filtration or clarification operations before bottling.
The colour of Maturano del Frusinate 'Arcaro' made by DS Bio is a luminous straw yellow. The impact on the nose is immediately characterised by a very clear minerality, accompanied by elegant and variegated spicy notes, with a dynamic reminder of citrus sensations. Equally savoury is the first taste, a taut, ready-to-drink sip characterised by a lively freshness with delicate hints of softness and a rather persistent finish. A surprising, territorial white of great balance and gustatory pleasure: to be enjoyed with spicy, perhaps oriental cuisine or with fresh or slightly mature goat cheeses.
