The Vermentinu 'Grotta di Sole' by the family-run estate Clos Marfisi is a highly territorial white wine originating from northern Corsica, precisely within the Patrimonio area. The name 'Grotta di Sole' refers to the homonymous vineyard in the municipality of Poggio d'Oletta, from which the grapes destined for this label come. It is a plot of 2 and a half hectares planted on a slightly hilly terrain consisting of clay and limestone, with surface outcrops of schist.
The 'Grotta di Sole' Vermentinu by Clos Marfisi is a pure Vermentino from vines cultivated on clay and limestone-rich soils without the use of herbicides, pesticides, and chemical fertilizers, in accordance with the principles of organic agriculture. Once the grapes have reached the ideal ripeness stage, they are handpicked and then softly pressed, with alcoholic fermentation occurring spontaneously in temperature-controlled stainless steel containers. After the slow fermentation process is completed, the wine is transferred to concrete tanks for a maturation phase of at least 5 months, after which it is bottled without prior filtration.
