Le Grüner Veltliner produit par l’abbaye de Novacella est une belle interprétation de cet ancien cépage autrichien, qui a maintenant trouvé une résidence secondaire dans la vallée de l’Eisack. Cette petite région du Haut-Adige, qui s’élève à travers les montagnes vers le col du Brenner, est l’habitat idéal pour les grands cépages blancs du nord de l’Europe. C’est un blanc qui exprime très bien le caractère de son terroir, avec la fraîcheur parfumée et minérale typique des vins de montagne. Raffiné et élégant, il joue ses meilleures cartes au niveau de la délicatesse des arômes aux nuances multiples, donnant une gorgée d’une grande finesse gustative.

Grüner Veltliner wine is the fruit of the work of one of the oldest cooperatives in South Tyrol. The winery of the Abbey of Novacella has been producing wine since the 12th century and is still a landmark for the upper Eisack Valley. The estate extends over 26 hectares of its own property and 50 hectares of small cooperative members. The Grüner Veltliner vineyards are located in the Varna area, in the heart of the Brixen basin, at an altitude of 650 to 750 meters above sea level. The particularly cool climate and stony soils of a morainic matrix, composed of mica schist, gneiss, and quartzite, proved very suitable for the Austrian grape variety. Fermentation takes place at a controlled temperature, ¾ in stainless steel and the rest of the mass in 30-hectoliter oak barrels. The wine matures in stainless steel and wood for about 6 months before bottling.

Abbazia di Novacella Veltliner is a label that is part of the Classica line of the famous South Tyrolean winery, a range of wines that was created to highlight the varietal characters of the various grape varieties in their immediate varietal fragrance. To the eye, it is straw yellow in colour with bright greenish highlights. The nose is subtle and elegant, with aromas of white-fleshed fruit, Granny Smith apple, hints of hay, mountain herbs and a delicate spicy sensation of white pepper. The sip is delicate and clear, with pleasantly fruity aromas, herbaceous hints and a fresh finish that returns to spicy notes. It is ideal for enjoying delicate seafood dishes or with vegetable-based first courses.
