Valpolicella Superiore Ripasso "Monti Garbi" encapsulates all the brilliant personality of the Tenuta Sant'Antonio winery and expresses the great potential of the Valpolicella terroir at its best. Monti Garbi is the locality, included in the municipality of Colognola ai Colli, where there are some vineyards and the winery of Tenuta Sant'Antonio, founded in 1989 by the four Castagnedi brothers from a paternal estate.
Tenuta Sant'Antonio's Valpolicella "Monti Garbi" is made using the ripasso technique, which consists of re-fermenting the wine on the residual pomace of the Amarone in order to strengthen its structure. This refermentation takes place for "Monti Garbi," in 500-litre oak tonneaux, with batonnage carried out monthly for one year. Finally, the production process involves resting for at least 15 months in 500-litre tonneaux, 30% of which are new and 70% second-passage.
From the marked winemaking expertise of the Castagnedi brothers comes a wine closely linked to Veronese terroir and tradition but with a precise and modern personality that is extremely elegant. The nose dispenses a bouquet of violets and petunias combined with hints of underbrush, wild fruits, spices and tobacco. The mouth is traversed by mineral trails and soft, enveloping aromas, illuminated by a good freshness that closes on a spicy texture.
