Valpolicella Classico Superiore 'Le Sassine', produced by the Le Ragose winery, is the classic red wine of the area, an expression of the most ancient tradition and indigenous vines of this area of Veneto, which for centuries have adapted very well to the pedoclimatic conditions of the splendid Valpolicella hills. Its fresh, flowing, intense and fruity character makes it very ductile in gastronomic pairings, making it a perfect companion both for savoury first courses and for poultry and white meat main courses.
'Le Sassine' is a Valpolicella Classico Superiore produced in the Negrar area, in the heart of Valpolicella. The Le Ragose estate covers 18 hectares with vineyards still cultivated using the traditional pergola system, which keeps the grapes protected from the sun so that they can ripen slowly and optimally, especially in the hottest summers. The Corvina, Corvinone, Rondinella and other local red grapes come from a selection of different vineyards located in hilly areas with a sunny west and south-west exposure. The soils are composed of red clays, with the presence of volcanites and Eocene limestones. Harvesting is carried out manually and after destemming, fermentation takes place in stainless steel vats with only indigenous yeasts, with maceration on the skins for 10-15 days. The wine then matures in Slavonian oak barrels for a period of 36 months.
