SPUMANTE ROSÉ METODO CLASSICO EXTRA BRUT 'EXXENTIAL' CASA CATERINA 2012 DESCRIPTION

The Metodo Classico Extra Brut Rosé ‘Exxential’ Sparkling Wine is an Italian expression of Pinot Meunier with a complex and profound character, crafted through an authentic approach by the artisanal winery Casa Caterina. This is yet another great sparkling wine created by the Del Bono brothers, produced in very limited quantities through an extensive aging process on the lees. This method is aimed at enhancing the typical structure of Pinot Meunier, which gives this label a highly gastronomic character.

The Metodo Classico Casa Caterina Extra Brut Rosé ‘Exxential’ Sparkling Wine is made from 100% Pinot Meunier, grown according to the principles of biodynamic agriculture on clay-limestone soils. The harvest is done strictly by hand, and the grapes are then softly pressed after a brief skin maceration, necessary to achieve the rosé color that characterizes this sparkling wine. At this point, the must undergoes spontaneous alcoholic fermentation, thanks to the sole intervention of indigenous yeasts, with the subsequent refermentation occurring in the bottle according to the Metodo Classico, once again in a spontaneous manner, using frozen must as the sugar source for the tirage. The wine ages on the lees for a full 120 months, after which it undergoes disgorgement and is topped up with the same wine.

The Casa Caterina ‘Exxential’ Extra Brut Rosé Metodo Classico Sparkling Wine has an intense and brilliant pink hue with a refined perlage. The rich aromatic profile carries scents of small red fruits and almond, combined with floral hints and a slight smoky touch. The taste is remarkable for its complexity, elegance, and richness, as well as for the balance between excellent structure and vibrant freshness.
