Rosé de Saignée are rose wines, mostly sparkling, produced through a technique known as "salasso" (Saignée in French), which consists in taking the must of the red wine in maceration when the liquid has reached the desired color and extraction by the winemaker. More properly, this term is adopted in Champagne to distinguish Rosé produced by the blending of white wine and red wine from those made through a short maceration of the must of black grapes.
The Classico Rosé de Saignée Alessandra Divella Spumante Dosage Zero is produced with only Pinot Noir grapes grown in the hills of Gussago, on the eastern borders of the Franciacorta area, on soils of limestone matrix. The base wine is made by short maceration on the skins, quantified in a few hours, and spontaneous alcoholic fermentation in used barriques. After a few months of aging, the mass is then placed in the bottle for the fermentation according to the Classic Method, with 54 months of aging on exhausted yeasts. At the end of this long period the bottles are disgorged and then filled with the same wine, without dosage and exogenous additions.
