The Metodo Classico Spumante Extra Brut 'Etral' from the winemaking reality Chemin de Vignobles constitutes a creamy bubbly from Valle d'Aosta with a fresh and mineral character. The Chemin de Vignobles project stems from the desire of Giorgio Anselmet, former owner of the famous Maison Anselmet, together with his friends Andrea Malgaroli and Mattia Parello, to make Champenoise methods by combining Chardonnay with the indigenous Prié Blanc grape variety. In fact, this ancient white berry variety characterized by a very short growing cycle lends itself well to sparkling wine thanks to its high acidity.
'Etral' Spumante Metodo Classico Extra Brut Chemin de Vignobles comes from a blend of Prié Blanc and Chardonnay grown in the Alps of the Aosta Valley. Once the sparkling wine base is made, the liqueur de tirage is added for the second fermentation in the bottle according to the Champenoise Method. 'Etral' then rests 36 months on the lees inside ancient caves near Villeneuve. Once the sur lie ageing period is over, the degorgement takes place, and the subsequent Extra Brut dosage precedes the further stay in the glass.
