The ‘Preja Cuvée 24 Mesi’ Classic Method Rosé Extra Brut Sparkling Wine by the Piedmontese producer Paolo Ferri is a rosé sparkling wine with an intriguing and engaging flavor. When Paolo Ferri started his winemaking project in 2012, he aimed to enhance Vespolina, an ancient indigenous variety of Alto Piemonte traditionally vinified in blends with other grapes, such as Nebbiolo, to create still red wines. However, due to the high acidity of its grapes, Vespolina is also suitable for making excellent sparkling wines, as the producer recognized.
The ‘Preja Gran Cuvée 24 Mesi’ Classic Method Rosé Extra Brut Sparkling Wine by Paolo Ferri is made from a blend of Pinot Noir grapes (60%) and another red grape variety (40%). The grapes come from vineyards planted on morainic and alluvial soils, enjoying a cool climate with significant temperature variations between day and night. The grapes are vinified in rosé with a short maceration on the skins, followed by alcoholic fermentation in stainless steel tanks. The secondary fermentation takes place in the bottle according to the Classic Method, with aging on the lees for 24 months before disgorging and final Extra Brut dosage.
