The Soave Classico "Calvarino" by Pieropan originates in Soave, in the province of Verona, a land known for wines of recognized quality worldwide. The winery boasts a history spanning over a century: in 1901, Leonildo Pieropan decided to renovate an old family estate called "Il Calvarino" with some surrounding land. His sons Fausto and Gustavo continued this legacy a few years later, starting a small wine production that would later expand and develop with their nephew Leonildo. The latter brought a breath of innovation, applying the knowledge gained at the Conegliano School of Oenology and introducing modern winemaking and vineyard practices and experimental techniques in the vineyard. Today, the fourth generation continues to carry on this historic business with an eye toward the future.
The Garganega and Trebbiano di Soave grapes for the Soave Classico "Calvarino" by Pieropan grow on volcanic, basaltic soil, imparting a distinctive character to the wines. The vineyards are situated at an altitude ranging from 200 to 300 meters above sea level, employing a guyot and pergola veronese training system. The climate is continental, with hot, muggy, sunny summers and cold, snowy winters with sudden frosts. The grapes are harvested manually, and the bunches are gently pressed in the cellar, selecting the best must. Alcoholic fermentation takes place in steel, and the wine matures on the lees for 12 months, followed by an additional 14 months in glazed cement.
The colour of the Soave Classico "Calvarino" by Pieropan is a bright and intense straw yellow. The aromas evoke jasmine, hawthorn, and elderflower, combined with ripe apple and a finish reminiscent of toasted hazelnuts. It is elegant, enveloping, and fine on the palate, with good minerality and a persistent finish that lingers from glass to glass. Recommended pairings include dishes with shellfish and molluscs, smoked salmon, sushi, sashimi, and vegetarian dishes.
