Aeblerov 'Rainbow Child' Cider originates from a combination of cider apples and apples of the Rød Aroma and Topaz varieties, fruits grown organically by local farmers. It is fermented using only indigenous yeasts, and the mass is macerated first with Solaris grapes and then with elderflower in order to enrich the cider with complex and distinctive aromas. This is followed by cold hopping with Citra hops before bottling, which is done without any filtration.
