The 'Nerios' Domaine Johanna Cécillon cider is a powerful and structured cider, ideal for gastronomic pairings. Working alongside her father and grandparents, Johanna learned how to make cider from an early age and today runs the family Domaine together with her spouse Louis, a descendant of a long line of Rhône wine growers. Through practices that respect the environment and the ecosystem, the two take personal care of 11 hectares of orchards, where no less than 14 different apple varieties are found, characterised by widely varying levels of sweetness and sourness, attributes that are the basis of the Domaine's varied offer.
Domaine Johanna Cécillon Cider 'Nerios' comes from apples grown organically and biodynamically on soils characterised by a high presence of granite and clay. The apples are harvested by hand between September and December, and are then stored for a short period in order to ripen further. After alcoholic fermentation in steel tanks, the liquid is transferred to oak barrels for maturation for a few months, followed by a second fermentation in the bottle using indigenous yeasts. Gasification, pasteurisation and sulphurisation are excluded during the entire process.
The 'Nerios' cider from the Breton production company Domaine Johanna Cécillon has a characteristic bright coppery colour. The aromatic range opens on hints of baked apple, caramel and dried fruit, soon joined by perceptions of liquorice and vanilla. The palate is broad and structured, warm and slightly tannic, with a fine and persistent bubble. Due to its important structure, the producer himself recommends pairing the 'Nerios' cider with white meats or mature cheeses.
