Poiré Belenos' Extra Brut Cider is a slightly alcoholic drink with a tense and refreshing taste, produced in Brittany by Domaine Johanna Cécillon from organically and biodynamically grown pears. In fact, although apples are the Domaine's main fruit, Johanna and her spouse Louis also grow a few pear trees. The names of the labels of this French production reality recall Celtic deities such as Bélénos, god of the Sun, thus underlining the link between cider and the ancient Celtic people.
'Poiré Belenos' Cider Extra Brut Domaine Johanna Cécillon is made from pears grown according to the dictates of biodynamics on deep clay soils. Following manual harvesting, which takes place in September, the pears are stored for a short time in wooden paloxes in order to reach a more advanced maturity. The ensuing alcoholic fermentation of the juice takes place in steel tanks thanks to the intervention of indigenous yeasts alone, and after a few months of maturation, bottling and a second fermentation in glass. The bottles are then kept lying on the lees for a full 24 months, at the end of which they are disgorged a la volée. During the entire process, the liquid is not subjected to any pasteurisation, gasification or addition of sulphites.
Domaine Johanna Cécillon 'Poiré Belenos' Cider Extra Brut is light golden yellow in colour. The olfactory range evokes typical hints of pear, combined with perceptions of citrus peel, melon and bread crust. Refreshing and taut on the palate, it has a nice minerality and fruity sensations consistent with the nose. The producer's recommendation is to enjoy this cider at a temperature of 10° C in combination with seafood or cheese.
