Mario Schiopetto's Sauvignon is an elegant, fresh, and aromatic white wine from Collio, confirming the absolute quality of one of the most famous and historical producers in this small area of Friuli Venezia Giulia. The bouquet is intense and multifaceted, with citrus, ripe fruit, tropical hints, and balsamic nuances. The taste is aromatically deep and persistent, supported by a lively vein of mineral freshness. A perfect white to pair with shellfish or dishes with asparagus.
The Sauvignon wine comes from the vineyards of the Capriva Cru, the original nucleus of the Schiopetto estate, which also manages vineyards in the prestigious areas of Zegla, Pradis, and Oleis. The ancient French grape variety has found conditions in Friuli to express itself at levels of absolute excellence. The splendid sunny exposures, protected from the cold winds of the north by the Julian Alps and mitigated by the gentle breezes of the nearby Adriatic Sea, have proven perfect for a slow maturation of grapes with rich and intense aromas. The soils of oceanic origin, characterized by the presence of Flysh or "ponca" in Friulian, derived from sedimentation of sandstones and limestones on ancient seabeds, are draining and rich in mineral substances. After manual harvesting, soft pressing is carried out with the decantation of the must in the absence of sulfur dioxide. Fermentation takes place in stainless steel tanks at a controlled temperature and lasts about 10-12 days. The wine rests on the lees for about 8 months in steel and finishes its refinement with 5 months in the bottle.
Schiopetto's Friulian Sauvignon is a true terroir wine, which, while highlighting the best varietal characteristics of the French grape variety, enhances above all the pedoclimatic characteristics of the Capriva del Friuli area. Its rich and Mediterranean profile is well balanced by the freshness and typical salty and mineral notes of the Collio soils. It has a straw yellow color with greenish reflections. On the nose, it opens up with typical varietal aromas, with vegetal notes, citrus aromas, exotic fruit, and hints of mint and aromatic herbs. On the palate, it offers a sip of persistent and deep aromas, with clear salty and mineral sensations that accompany towards a final lively freshness.
