Sauvignon from renowned Friulian producer Livio Felluga takes the form of a fresh and flavorful white wine with excellent territorial and varietal adherence. Sauvignon Blanc is one of the international grape varieties that have shown the greatest affinity to the Collio area, where it was introduced during Habsburg rule and spread in the early 1900s. Today, this variety is part of Friuli's winemaking tradition and has unquestionably contributed to the region's oenological success.
Livio Felluga's Friuli Colli Orientali Sauvignon is derived from only Sauvignon Blanc grapes grown on the characteristic "Ponca," soil composed of alternating marl and sandstone of Eocene origin, stratified under the seas over millennia. After the manual harvesting of the bunches of grapes, a gentle destemming is carried out, followed by a short period of pre-fermentation maceration, at the end of which soft pressing takes place. The must thus obtain is left to clarify by decantation and then sent to alcoholic fermentation in temperature-controlled stainless steel tanks. Once the fermentation process is concluded, the wine is kept for some months, resting on the yeasts before final bottling.
Livio Felluga Sauvignon Friuli Colli Orientali has a straw yellow hue with greenish highlights. Intense and penetrating varietal hints of grapefruit, lime, elderflower, passion fruit, lychee, boxwood and sage, combined with fine nuances of dandelion, mint and custard. Taste vibrant and characterful, of harmonious freshness and firm savoriness, with clear and persistent varietal echoes that recall the sensations felt on the nose. By virtue of its important fresh-savoury verve, this Sauvignon represents a splendid pairing with seafood first courses or various stewed fish.
