Franz Haas's Sauvignon is the portrait of elegant aromaticity stemming from the hills that introduce the South Tyrolean mountains. Franz Haas Sauvignon is made from 100% of the grape variety of the same name. They come from vineyards located near the municipality of Montagna, in the province of Bolzano, at an altitude ranging from 400 to 800 meters above sea level. The soils originate from dolomite erosion and, therefore, give the grapes a distinctive mineral signature. Once harvested, the grapes are left overnight to cold macerate in contact with their skins. It is then pressed and transformed into must, which ferments partly inside steel containers and partly in barriques. In the same containers, it carries out an ageing period of about 8 months, in contact with yeasts. After this period, the batches are assembled in steel tanks.
Franz Haas' white Sauvignon has a pale straw yellow colour with greenish highlights. Its flavour profile is faceted and surprising, veering from fruity notes of white peach and elderberries to distinctive notes of dried fruit and oriental spices. The taste is full and elegant, enlivened by an interweaving of freshness and savoriness. It is a wine that looks far ahead, making it perfect to accompany dishes far removed from the local gastronomic tradition.
