Sauvignon "Fallwind" from San Michele Appiano was born in South Tyrol in one of the area's most renowned wineries. The winery is the result of synergistic and coordinated work by local winegrowers who, since 1907, have put their knowledge and experience at the service of the community to produce a wine of unquestionable quality. The working philosophy focuses on the enhancement of the intrinsic characteristics of the land and the need to make the most of the native grape varieties present. Today, the cooperative has about 304 families from different locations in the province of Bolzano; they are involved in cultivating 380 hectares fully planted with vines, located mostly in the municipality of Eppan, directed by the knowledgeable experience of president Klaus Pardatscher.
Sauvignon "Fallwind" grapes from San Michele Appiano grow at an altitude of about 600 meters above sea level. "Fallwind" is the characteristic wind of this area and helps give the final product great aromatic expression and longevity. The exposure is southeast, excellent for the sun's rays to penetrate steadily between the rows, ensuring perfect ripeness of the grapes; the soil is composed of gravel and limestone for wines with a structure of the character. Harvesting is done manually in late September, and already in the vineyard, a selection of the best bunches occurs. In the winery, alcoholic fermentation takes place in steel, as does ageing on the lees until the end of February the following year.
The colour of Sauvignon's "Fallwind" from San Michele Appiano is a light yellow with bright highlights. The bouquet of aromas is reminiscent of unripe yellow-fleshed fruit such as pineapple and green apple, gooseberries in union with elderflower and wildflower honey; in the mouth, it is fresh, balanced and stimulating with a pleasant minerality at the end that beckons the drinker. In pairing, it goes well with asparagus dishes, but it is also interesting with sushi and sashimi, white meats cooked in Asian recipes and traditional Tyrolean specialities. Perfect for formal lunches with business colleagues, sharing the most authentic flavours of the South Tyrolean land.
