The Sauvignon from the Draga winery is obtained from pure Sauvignon Blanc grapes sourced from the renowned area of San Floriano del Collio, in the heart of Friuli Venezia Giulia. This dry white wine, with its pronounced aromaticity, embodies the excellence and winemaking tradition of this region and the winery itself, which, as heir to a long family history linked to viticulture, is characterized by its commitment to sustainability and non-invasive practices. "If you respect Nature and the land, they will never betray you," these are the wise words of grandfather Franz, the foundation of all of Draga's work. Among the sun-kissed vineyards at 200 meters above sea level, each grape cluster encapsulates the essence of a unique territory, composed of hilly marl and sandstone soils, locally known as "ponca."
This wine benefits from a privileged microclimate and a particularly favorable terroir. Winemaking techniques are equally rigorous and attentive to preserving the natural characteristics of this land: from manual harvesting to meticulous grape selection, to 24-hour maceration in contact with the skins and delicate pressing. Alcoholic fermentation takes place in stainless steel tanks, maintaining a constant temperature of 16 degrees to best preserve the primary aromas. After 7 months of refinement in contact with the lees, the wine is bottled in temperature-controlled steel barrels, followed by further aging in the bottle.
The Draga Sauvignon stands out for its splendid straw yellow color with greenish reflections that anticipate a rich aromatic bouquet where notes of elderflower, sage, and green pepper harmoniously blend with citrus hints of lime and grapefruit. On the palate, this white wine reveals itself to be ample, mineral, and fresh, with a pleasant sapidity that makes it versatile in pairing. Perfect, indeed, with seafood appetizers, asparagus risottos, and many other dishes of Mediterranean cuisine, this wine is an ideal companion for a variety of occasions.
