The Saint Aubin Premier Cru 'Les Castets' from Domaine Henri Prudhon & fils is configured as an expression of Burgundian Chardonnay with a rich and refined aromatic profile. The lieu-dit 'Les Castets' has just 5.5 hectares classified Premier Cru, planted on soils rich in stones and limestone marl. The high slope and porosity of the soil mean that the roots of the plants tend to grow deep in search of water, a factor that favors the high concentration and extraordinary minerality of the wines. This is the westernmost Premier Cru of the AOC of Saint-Aubin, dedicated mostly to Chardonnay, a grape variety that provides qualitatively better results here than Pinot Noir.
'Les Castets' Domaine Henri Prudhon Saint-Aubin Premier Cru is a pure Chardonnay from vines of an average age of 15 years, grown on clay-limestone matrix soils with eastern and southeastern exposure. After harvest, the grapes are soft-pressed using a pneumatic press, and the must then ferments in small, used French oak barrels. The next stage of maturation also takes place in French oak barrels, in this case with a percentage of new wood of 25 percent, for a total period of 12 months spent on the fine lees. This is followed by bottling and further resting in glass before final release.
