Antonelli San Marco's "Chiusa di Pannone" sees its 25-year-old Sagrantino vineyards grow at an altitude of about 400 meters above sea level with southern exposure. The soils are composed mainly of clay and limestone, rich in gravel and remnants of rivers and ancient lakes. The story of this Sagrantino begins with the harvest, starting in the second week of September and carried out only by hand. Once the clusters are brought to the winery, they are carefully selected and then go to fill gravity tanks in which fermentation on the skins will wait for about 3-4 weeks at a temperature of about 28 degrees. After the malolactic fermentation takes place in wood, an aging process initially of 48 months in tonneaux and 25-hectoliter oak barrels concludes the process, ending with 6 months in cement.
