Moon Import introduces Dominican Republic Rum 'Remember', a distillate rich in roasted sensations aged in oak barrels previously used to mature sherry, whisky or brandy. It is precisely the maturation phase that has a great influence on the colour of the rum, which is strongly influenced by the length of time it has been in oak barrels, but also by whether the barrel has previously contained another distillate. For example, barrels that have been used for sherry have partly absorbed the brown pigments of this fortified wine, pigments that will later be transferred to some extent to rum.
Dominican Republic Moon Import 'Remember' Rum is derived from sugar cane plants grown in the Dominican Republic. When the plants are ripe, they are cut and then pressed, with the juice being fermented for a few days. The subsequent distillation process is carried out in a combination of Patent Still continuous stills and Pot Still discontinuous stills and the distillate is then transferred to Scotland where it is aged for a long period in oak casks previously used to age sherry, whisky or brandy. The decision to age the rum in Scotland is due to the particular climatic conditions of the country, which create an ideal environment for the optimal sensory evolution of the rum, as well as the long and established tradition of the Scottish people, the most expert in the art of maturing spirits. At the end of the ageing process, the rum is finally bottled and marketed under the Moon Import brand.
Moon Import's Dominican Republic Rum 'Remember' has an intense amber colour. The nose has smoky hints of vanilla and blond tobacco that are lightened by notes of pepper and lime zest. The palate is soft, warm and enveloping, with lingering sensations of hazelnut and toasted almond.
