Prosecco "Il Fondo della Tradizione" Col del Sas, also called Prosecco Ancestrale, is one of the most typical and traditional expressions of the entire Conegliano Valdobbiadene area. It is, in fact, produced without sparkling but following an ancient method that involves re-fermentation in the bottle during the spring period and resting on the lees until consumption. This Metodo Ancestrale differs from the Metodo Classico because it does not allow disgorging and final dosage, signalling a rare and splendid recovery of tradition.
Prosecco "Il Fondo della Tradizione" is a light but well-structured wine characterized by yeast deposit at the bottom of the bottle (hence the name). It is recommended to be consumed after decanting to separate the deposit from the wine, but it can also be served straight from the bottle; this way, you will drink a slightly cloudy Prosecco in a perfect old-fashioned style.
"Fondo della Tradizione" presents itself in the glass with a beautiful yellow colour, animated by an extremely fine perlage. Thanks to the long rest on yeasts, it exhales magnificent aromas of ripe yellow fruit and bread crust. The taste is very dry, with no sugar dosage having been added, but harmonious and pleasant. This is a distinctive and well-structured Prosecco capable of accompanying appetizers and fish dishes as well as more savoury dishes such as pasta dishes and barbecued meats.
