The Borgo San Daniele Pinot Grigio is a full-bodied, smooth white wine made in the municipality of Cormons, in the Collio Friulano region. For more than 20 years, the Borgo San Daniele winery has been producing faithful and typical interpretations of this noble wine-growing area, made from grape varieties that have been cultivated here for more than 150 years, such as Pinot Grigio. At the helm of the estate are siblings Alessandra and Mauro Mauri, she responsible for the commercial and communication side and he for the viticultural and oenological side. The vineyards, cared for in harmony with nature without the use of synthetic chemical products, are surrounded by wild grasses, woods and meadows.
This Pinot Grigio by Borgo San Daniele derives from a grape variety of the same name, cultivated in accordance with the principles of biodynamic agriculture in the Bosc di Sot locality in the municipality of Cormons. Once the grapes have reached the right degree of ripeness, they are gently pressed, followed by a brief skin maceration at a controlled temperature and then a soft pressing of the mass. The ensuing alcoholic fermentation takes place at a controlled temperature and the wine rests on the lees until spring. Maturation of several months takes place for 80% of the mass in steel tanks and the remainder in large oak casks, and the mass is finally bottled without undergoing any filtration.
The Pinot Grigio Borgo San Daniele has a straw-yellow colour tending towards golden. The nose unfolds on hints of white flowers and ripe fruit, with a predominance of pear, which with time turn towards aromas of dry hay and toasted almond. The taste is full and balanced, soft and harmonious, with an elegant mineral and fruity persistence.
