"Il Pareto" by Tenuta di Nozzole - Folonari originates in Greve in Chianti, within the Chianti Classico subzone north of Florence. The estate dates back to the 1300s and has around about 385 hectares of land that belonged over time to Florentine noble families; today, the winery that stands within the estate is run by Ambrogio and Giovanni Folonari, father and son, respectively, who put into practice the experience and tradition learned from their grandfather Nino, formerly a winemaker in Valtellina and Valcamonica, who landed in the 1960s in this area to devote himself to small-scale quality production. The working philosophy is based on enhancing the territory and its intrinsic potential for refined and elegant products.
The "Il Pareto" vineyards by Tenuta di Nozzole - Folonari rise between 330 and 370 meters above sea level. The territory is crossed from north to south by the river Greve, which contributes to the soil with the presence of marl and clay for a final product with an elegant character. The climate is continental with hot, sultry summers and winters with cold temperatures, winters often subject to frost and sudden snowfall. The wine is named after the vineyard where the clusters of Cabernet Sauvignon, a pure varietal used for the wine, grow. In the winery, the must undergo maceration with délestage and pumping over in steel tanks for about 22 days. Then, it rests for 2 months in steel and 24 months in French oak barrels. Ages 6 months in bottle.
To the eye, Tenuta di Nozzole - Folonari's "Il Pareto" appears deep ruby red with brilliant reflections. The bouquet of aromas is reminiscent of wild berries, herbaceous and balsamic hints and sweet spices such as vanilla; on the palate, it is intense, elegant and enveloping with a tannin refined by the passage in barrique and pleasant to drink. In pairing it is excellent with traditional Tuscan red meat cuts cooked on the grill and in stews, local game and first courses dressed with elaborate sauces; also curious with aged cow's and sheep's milk cheeses.
