Moscato d'Asti Canelli 'Sant'Ilario' Ca' d'Gal 2022

Moscato d'Asti "Sant'Ilario" is a sweet sparkling wine with a broad and elegant personality, one of the great expressions of Moscato from the Ca' d'Gal winery. It is produced from the aromatic and golden grapes of two small plots located in the locality of Canelli, nourished by an optimal soil: light, tending to white, calcareous.
The grapes from which Moscato d'Asti "Sant'Ilario" is made are harvested when fully ripe in order to fully capture all their aromatic potential and most complex characteristics. The temperate microclimate, determined by cold winters, rainy autumns and dry summers, guarantees the Moscato grape's structure and body, along with freshness and minerality. Vinification takes place in steel autoclaves, not before letting the must decant overnight. The production process involves a series of indigenous fermentations activated by indigenous yeasts and, finally, a final temperature-controlled fermentation in the spring, lasting several days. In late May, the wine is bottled in isobaric mode and, after filtration and put on the market no earlier than September.
Moscato d'Asti "Sant'Ilario" Ca' d'Gal shows a beautiful intense yellow colour enlivened by golden hues and a fine perlage. The nose is broad and elegant, with very pleasant notes of yellow fruit. In the mouth, it gives an enchanting sweetness that never risks being heavy or cloying. Supported by good freshness, the "Sant'Ilario" tickles the senses with a creamy and velvety carbonic presence that is never intrusive. Fairytale-like is the long finish, with nuances of interesting complexity.
