Morella's Mezzogiorno is surprising. How to find a Fiano grown in the heart of Salento on red soil. A truly excellent Fiano, produced with very low yields by the Morella winery, is a splendid biodynamic reality that has reached the heights of southern viticulture.
From a selection of two old Fiano vines located directly in Campania, derive clones planted with sapling vines in a parcel close to those of Primitivo, near Manduria. Red soil on a limestone rock substrate with widespread quartz veins. After the pressing stage through the traditional vertical press, they must undergoes static decantation. Subsequently, fermentation alcoholic spontaneous in tonneaux and cement, through indigenous yeasts only, is initiated. Finally, wine ageing takes place in a barrel for a period of 7 months.
The Noon to the eye has a bright straw yellow colour, reminiscent of the light that colours the vineyard on spring days.
