Mezcal Artesanal Pechuga marks the culmination of the Palomo distillery's continuous quest for quality. This brand of the Productores del Buen Agave Consortium has, for several generations, handed down the ancient savoir-faire in the production of artisanal Mezcals that draw on the local tradition of the Mexican state of Oaxaca. The precious distillate is the fruit of the Angustifolia Haw (Espadín) agave variety, which is processed by expert jimadors to extract its heart. After cooking the agave, the juice is fermented. The next stage involves no less than three successive distillations, which take place under the watchful eye of Mezcalero Master Carlos Méndez Blas. During the last distillation, the pechuga, a bag of chicken meat, fruit and spices, is added, through which the vapours pass before condensing, absorbing rich and complex aromatic nuances.
