The production process, in fact, in addition to the classic juice from the cooking of the agave heart and subsequent distillation, also involves the use of Oaxacan mole, a famous Mexican sauce with a particularly intense and persistent taste. The classic taste of the popular distillate is thus enriched with spicy nuances, especially reminiscent of the spicy sensations of chilli peppers.
Mezcal Artesanal con Mole originates from the experience of the Palomo distillery, which belongs to the Productores del Buen Agave Consortium. The company is located near Santiago Matatlán, in the Mexican state of Oaxaca, and for three generations has been involved in the production of artisanal Mezcal of excellent quality, following the typical traditions of the area. At the basis of the distillate's success is a careful selection of agave plants of the Angustifolia Haw (Espadin) variety, cultivated in a particularly suitable terroir. The plants are cut and the heart is cooked in brick ovens, according to ancient customs. At the end of the fermentation phase, distillation is carried out in a copper still, under the expert supervision of Maestro Mezcalero Carlos Méndez Blas, and with the addition of the Mexican Oaxacan mole sauce.
