The wine is made from pure Maresco, an ancient white grape variety, often found promiscuously together with other grapes in the old vineyards of the Itria Valley. Recovery of the variety has brought out its delicate, floral, fruity profile and great freshness. The Maresco Bianco "Maccone" comes from a small Apulian winery, which has come to the forefront for its careful and accurate work in recovering and enhancing the ancient native grape varieties of the area. The Donato Angiuli estate is based between Adelfia and Acquaviva delle Fonti, in the Primitivo di Gioia del Colle area. Maresco's vineyards are located in the countryside of Cisternino and Locorotondo, areas that have always had a vocation for viticulture and in particular for the cultivation of white grapes. The soils are limestone with clay components and the climate is Mediterranean, hot, dry, but mitigated by the constant influence of sea breezes. Harvesting takes place in September, with manual harvesting of the best grapes in small crates. The grapes undergo a pre-fermentative cryomaceration for 48 hours followed by soft pressing. The must ferments spontaneously with only indigenous yeasts in steel tanks at a controlled temperature of 10 °C. Before bottling, the wine is aged for several months in steel tanks.
