The white wine 'Sursur' is made from the grapes of one of the most famous Sicilian white grape variety, Grillo. It is a widely cultivated variety that originates from Donnafugata's vineyards grown around their Contessa Entellina estate and on other estates in south-western Sicily. The grapes, carefully selected during the harvest, once in the vinification rooms, ferment alcoholically in steel containers at a controlled temperature in between 14 and 16°C. This is followed by the ageing phase, carried out for two months in steel and then, after bottling, for 3 months directly in the bottle.
Grillo 'Sursur' is a Sicilian wine that captivates right from its colour, which is light and pale, reminiscent of straw yellow. To the nose it's dynamic and enveloping, structured on notes of white-fleshed fruit alternating with more herbaceous and floral sensations.
