The Greco "Sophia" is a genuine and authentic expression of the Irpinia area, produced according to ancient Campania traditions. It is vinified with long maceration in 200-liter amphorae for 319 days, thus giving typical and varied aromas and a full-bodied and intense structure, slightly tannic and of great territorial expressiveness
Cantina Giardino's 'Sophia' Greco in Anfora is a peculiar and articulate macerated white wine that, as its name suggests, is vinified in amphora. We are in Ariano Irpinio, in the province of Avellino, an area that Cantina Giardino intends to enhance by respecting the normal rhythms of nature. With this in mind, it was decided to focus exclusively on native vines, including Greco, processed without any invasive intervention in the cellar. The 'Sophia' is the only label processed in amphora with prolonged maceration on the skins, and depending on the vintage, a different grape variety may be used, as the intention is to focus on the wine vessel rather than the variety used.
Cantina Giardino Greco in Anfora 'Sophia' is a 100 per cent Greco from vineyards approximately 70 years old, located at an altitude of 450 metres on sandstone and clay soils and cultivated organically. After harvesting, the grapes are pressed manually using a wooden press, and the must thus obtained is placed together with the marc in terracotta amphorae of about 200 litres capacity. In these containers, only indigenous yeasts carry out the alcoholic fermentation, which is even accompanied by more than 300 days of maceration on the skins before racking. The wine is then transferred to large oak barrels, where it matures for a further 6 months. Throughout the process, the mass is not subjected to any clarification or filtration and no sulphuration is carried out.
The orange wine Greco in Amphora 'Sophia' from Cantina Giardino has an intense yellow hue with nuances tending towards coppery. Energetic and complex on the nose with citrus and floral notes that meet saline mineral perceptions. The flavour is vibrant, rich and slightly tannic, endowed with a fine savoury vein and a lash of freshness.
