The "Fonte Farro" is a white Umbrian wine from Grechetto grapes that takes its name from the spring where the grandparents of the Annesanti winery brought the animals to drink. Pear notes, balsamic herbs, jasmine and mineral puffs intersect on an intense, warm and materic structure.
The Grechetto 'Fonte Farro' from the Annesanti winery is a very intense and structured white wine, named after a spring that springs from the rock on the winery's own land in Valnerina. This label is made from pure Grechetto grapes from vines grown using the traditional guyot and archaic method, on land with south-eastern exposure, characterised by silty-clayey soils. The winery is a family-run business, now managed with great care and dedication by the young Francesco Annesanti, who proposes an idea of wine-growing that preserves the rustic charm and ancestral heritage and meets the dictates of the biodynamic philosophy.
Fonte Farro' Grechetto is produced from carefully selected grapes that are harvested by hand, generally around the beginning of September. The grapes are then gently crushed in the cellar and fermented spontaneously, using only indigenous yeasts, in temperature-controlled stainless steel containers, with a brief maceration on the skins to extract tannin and increase the structure of this white wine. The wine is then racked and pressed and matured for a few months in stainless steel tanks. This is followed by bottling without clarification or filtration, on waning moon days.
Annesanti's Grechetto 'Fonte Farro' presents itself to the eye with a beautiful, luminous golden yellow colour. On the nose there are intense aromas of white and yellow fruit, including plum and pear, fresh floral notes of jasmine, hints of balsamic herbs, including eucalyptus, and then mineral puffs. In the mouth, it is full, round, warm and pulpy, characterised by well-presented tannin and a crisp and very pleasant freshness. This white wine from the Annesanti cellar is a Grechetto 'sui generis', decidedly complex and produced using artisanal methods.
