The Emilian production company Distina presents its Grappa di Malvasia Invecchiata, a distillate involving aromatic and toasted aromas due to both the grape variety and the passage in wood. The idea of founding the Distina winery and distillery was born in 2015, the year in which the young Claudio Campaner, originally from Milan, after a period of training with distillation master Vittorio Capovilla decided to work on the family property located in the Colli Piacentini, dedicating himself to the production of wine and distillates. It is no coincidence that the name Distina is derived from the union of the terms 'distillery' and 'cellar'.
Distina's Grappa di Malvasia Invecchiata originates from the pomace of Malvasia Bianca di Candia Aromatica grapes grown according to certified organic farming principles. The pomace undergoes a double bain-marie distillation according to the most laborious and qualitative discontinuous method, and, subsequently, the liquid is left to mature for 6-12 months in stainless steel tanks and for a further 8 months in small oak casks. The maturation process takes place 'at full strength', thus without any dilution with water.
The colour of the Distina estate's Grappa di Malvasia Bianca di Candia Aromatica Invecchiata is an intense, bright amber. The aromatic range opens on aromas of dried flowers, peach and apricot jam, enhanced by sweet hints of blond tobacco and vanilla deriving from oak ageing. On the palate, it is warm and enveloping, soft and intense, with a clear and tasty progression. To unleash the full potential of this grappa, it is recommended that it be served at room temperature in the classic tall tulip-shaped goblets that are ideal for barrel-aged grappas.
