Tenuta San Leonardo's signature Grappa Bianca comes from a strict selection of pomace, which, after a light pressing, is processed in a steam still. The production approach is traditional, leading to a young Grappa, aged only in steel, with a dry and vegetal profile, recalling the, therefore, more varietal components of the pomace of Merlot and Cabernet Sauvignon, international grape varieties always dear to the winery, used at the start. A label that confirms the blazon of Tenuta San Leonardo, which is also able to assert itself decisively with its line dedicated to spirits.
Tenuta San Leonardo White Grappa originates from the pomace of Cabernet and Merlot, sourced directly from the winery. Distillation takes place between October and November, immediately after the harvest, and is done by direct steam after the pomace is perfectly fermented. At the end of processing, the Grappa has a very high alcohol content, close to 75 degrees, and before bottling, it is diluted with distilled water to the desired degree. This is followed by refrigeration at 10 degrees for 48 hours, then followed by filtration. The Grappa is then stored in stainless steel containers until it is deemed ready to be bottled.
Tenuta San Leonardo's Grappa Bianca is completely colourless to the eye, with a clear, transparent hue. Concentrated the nose, which is painted with austere and complex olfactory notes, in which fruity touches and more vegetal references are traced. Rich and articulate, the sip makes its way onto the palate with a warm taste and excellent persistence. A label that traces the kindness and elegance typical of the Estate's wines, perfect for tasting at the end of dinner, during the most special evenings.
