Comarì del Salem by Uberti is one of the leading products in the territory of Franciacorta, consolidated in recent times as an area highly suited for the production of second-fermentation in bottle wines, according to the traditional Metodo Classico. Uberti family inherits her passion from a dynasty of winemakers, established in the Erbusco estate since 1793, as reported in the records of the family. Since the 80's, when sparkling wines were not a privilege and prerogative of the area, Agostino and Eleonora Uberti decided to bet on this production, performing a wine-career in the name of excellence that comes up to modern times. The company philosophy judges the choice of a nature-friendly cultivation of the vineyards as fundamental to obtain wines of absolute value: hence, the choice not to use herbicides or chemical fertilizers, to work in the vineyard only mechanically and by hand, to minimize any possible treatment in the rows. Comarì del Salem is a perfect interpreter of this approach: produced just from white grapes (chardonnay and pinot blanc), inside one of the best crus of Franciacorta, with excellent exposures, on a well-drained and rocky land, it spends 48 months of aging after the second fermentation. Produced every year by vintage, the Comarì del Salem is a product of smooth finesse, able to win the match with any dish, and thus to appreciate in the entire meal.
