Brut 'Essence' is a Franciacorta produced by a historic name in the area. Antica Fratta has origins dating back to the 19th century, when the area of Monticelli Brusati was already known for viticulture. It is an area with a special character, located on the outer edge of the glacial moraine of Lake Iseo. In this area, to the north-east of the appellation, the vines are cultivated on calcareous-clayey soils that are very suitable for the noble Burgundy varieties. After harvesting, the Chardonnay and Pinot Noir grapes are brought to the cellar and subjected to a very soft pressing. The free-run juice is fermented at a low temperature. After maturing for several months, the base wines are blended to create the definitive cuvée. Secondary fermentation takes place in the bottle according to the Metodo Classico, with at least 36 months resting on the lees.
