The biodynamic winery Weingut Werlitsch presents the white wine 'Ex Vero III', a blend of Sauvignon Blanc and Morillon that stands out for its formidable expressive breadth. The label 'Ex Vero III' is produced from grapes harvested in the steepest portion of the vineyard, characterized by extreme slopes that make any mechanical work impossible, obliging spouses Ewald and Brigitte Tscheppe to perform all cultivation operations by hand. This portion of the vineyard, located at the highest point of the hill, is also distinguished by very poor rocky soils.
'Ex Vero III' Weingut Werlitsch derives from an equivalent blend of Sauvignon Blanc and Morillon, varieties grown according to the principles of both organic and biodynamic agriculture, both certified. The soils on which the vines grow, situated in the highest and steepest portion of the vineyard, are characterized by the so-called "Opok", a type of soil consisting of calcareous marl alternating with sandy sediments and marine deposits. After manual harvesting, the grapes are destemmed, and undergo skin maceration for a few days. Alcoholic fermentation occurs spontaneously inside open wooden vats and is followed by complete malolactic fermentation and maturation for 24 months in large wooden barrels on fine lees. The wine is finally bottled without undergoing any clarification or filtration processes and without the addition of sulfites.
The macerated white wine 'Ex Vero III' from Weingut Werlitsch shows a straw yellow hue with intense golden reflections. The aroma is a riot of complex scents ranging from apple to pineapple, from orange to walnut, from yeast to salt, all supported by an energetic mineral accent. This strong minerality is found on the palate, accompanied by crisp freshness and good structure, elements that define an elegant and persistent progression.
