The Austrian white wine 'Ex Vero II' embodies an expression of the Styria region's genuine spirit, crafted by Weingut Werlitsch through a truly sustainable production philosophy. The grapes destined for this label come from a portion of the vineyard located in the central section of the hill, particularly barren and steep. Here, Sauvignon Blanc and Morillon grapes grow, which will compose the blend, with the former variety contributing freshness and vigor, and with Morillon, a grape genetically identical to Chardonnay, providing body and elegance.
'Ex Vero II' Weingut Werlitsch originates from a blend of Sauvignon Blanc (65-90%) and Morillon (10-35%) grapes grown according to the principles of organic and biodynamic agriculture, both certified. In particular, the vines are planted on soil called "Opok", consisting of calcareous marl alternating with sandy sediments and marine deposits. After manual harvesting, the grapes undergo vinification through a few days of skin maceration and spontaneous alcoholic fermentation in large open wooden vats. Once fermentation is complete, the mass ages in large barrels on fine lees for 24 months, after which it is bottled without prior clarification or filtration and without the addition of sulfites.
The macerated white wine Weingut Werlitsch 'Ex Vero II' has a straw yellow color with amber hues. The original and wide aromatic spectrum reveals hints of green apple, peach, melon, gooseberry, fresh hay, and spices, as well as peculiar perceptions of flint and smoke. The palate is elegant, tense, and fresh, with a long salty-mineral trail that accompanies the persistent finish. A wine capable of expressing the great oenological potential of Styria, characterized furthermore by excellent longevity.
